Ingredients
  

  • 1 lb ground pork
  • 2 cups Napa cabbage, finely shredded
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 package round wonton or gyoza wrappers
  • 1 small bowl of water for sealing
  • 2 tablespoons vegetable or neutral oil for frying
  • 1/2 cup water for steaming, divided by batches
  • Optional: Sliced scallions and toasted sesame seeds for garnish
  • Optional dipping sauce: 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp chili oil

Method
 

  1. In a large mixing bowl, combine the ground pork, shredded cabbage, minced garlic, grated ginger, soy sauce, sesame oil, and sugar.
  2. Mix the filling by hand or with a spatula until the ingredients are thoroughly incorporated and the mixture reaches a slightly sticky consistency.
  3. Optional: Pan-fry a small teaspoon-sized piece of the filling to taste-test; adjust seasoning with extra soy sauce or salt if desired.
  4. Place a rounded tablespoon of the filling in the center of a wrapper. Dip a finger in water and moisten the edges of the wrapper.
  5. Fold the wrapper over the filling and pleat the edges firmly to create a tight seal.
  6. Heat one tablespoon of vegetable oil in a large non-stick skillet over medium-high heat.
  7. Arrange the dumplings in the skillet, ensuring they do not touch. Sear the bottoms for about 2 minutes until they develop a golden-brown crust.
  8. Carefully pour 1/4 cup of water into the skillet and immediately cover with a tight-fitting lid to steam the dumplings for 5 minutes.
  9. Remove the lid and allow any remaining water to evaporate, cooking for an additional minute to re-crisp the bottoms.
  10. Repeat the cooking process in batches if necessary to avoid overcrowding the pan.
  11. Serve hot, garnished with scallions or sesame seeds, and accompanied by the dipping sauce.

Notes

To keep the pork juicy, keep your meat mixture chilled until the moment you are ready to wrap. If your wrappers are tearing, use less filling to reduce tension. For leftovers, store in an airtight container in the refrigerator for up to 2 days; reheat by pan-searing until crispy again or using an air fryer at 350°F for 4-5 minutes.
