Ingredients

  • 1 cup pre-cooked rotisserie chicken, shredded, or canned chickpeas, rinsed and drained
  • 1/2 cup plain, unsweetened Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 cup baby spinach or mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper

Equipment

  • Large mixing bowl
  • Whisk or fork
  • Chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Serving bowl

Method

  1. In a large mixing bowl, combine the Greek yogurt, lemon juice, dried oregano, olive oil, salt, and black pepper.
  2. Whisk the mixture vigorously until the dressing is smooth, creamy, and well-emulsified.
  3. Add the rotisserie chicken or rinsed chickpeas to the bowl and toss until they are evenly coated in the dressing.
  4. Gently fold in the baby spinach, halved cherry tomatoes, and sliced cucumbers until everything is beautifully combined.
  5. Transfer the mixture to a serving bowl and finish with an extra crack of black pepper if desired.

Notes

To customize your bowl, add a handful of crushed walnuts or sunflower seeds for extra healthy fats and crunch. For a meal-prep friendly option, store the dressing and the produce separately to ensure the greens stay crisp for up to 24 hours. If you want more heat, stir in a pinch of red pepper flakes or a dash of hot sauce.
