Ingredients
  

  • 8 oz fresh Cantonese egg noodles
  • 2 cups fresh bean sprouts
  • 2 tablespoons cooking oil
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh ginger, minced
  • 3 stalks green onions, sliced separate whites and greens
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon white pepper
  • 1 tablespoon toasted sesame seeds for garnish

Method
 

  1. Bring a pot of water to a boil. Blanch the fresh egg noodles for 60 seconds, then drain immediately and rinse under cold water to remove excess starch. Drain well.
  2. In a small bowl, whisk together the light soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, sugar, and white pepper until fully combined.
  3. Heat your wok or large skillet over high heat until it begins to smoke slightly. Add the cooking oil.
  4. Add the minced ginger and the white parts of the green onions, stir-frying for 30 seconds until fragrant.
  5. Add the drained noodles to the wok. Pour the prepared soy sauce mixture over the noodles.
  6. Toss rapidly using tongs or chopsticks for two minutes, ensuring every strand is coated and the noodles are slightly browned.
  7. Stir in the fresh bean sprouts and cook for an additional 30 seconds to maintain their crunch.
  8. Remove from heat, garnish with the green parts of the scallions and toasted sesame seeds, and serve immediately.

Notes

For the best texture, ensure your noodles are completely drained before they hit the pan to prevent steaming instead of searing. If the noodles stick, add a teaspoon of hot water to loosen them. Feel free to add protein like sliced chicken, shrimp, or tofu for a heartier meal. Store leftovers in an airtight container in the refrigerator for up to 2 days.
