- Bring a large pot of water to a boil and cook the noodles for 30 seconds less than the package instructions to ensure they remain al dente.
- Drain the noodles immediately and rinse under cold water to remove excess starch; drain again and set aside.
- In a small bowl, marinate the sliced pork with 1 teaspoon of soy sauce and the cornstarch for at least 5 minutes.
- In a separate small bowl, whisk together the dark soy sauce, light soy sauce, Shaoxing rice wine, and sugar to create your seasoning sauce.
- Heat the neutral oil in a wok over high heat until it begins to shimmer.
- Add the marinated pork to the wok and sear until browned and cooked through, then remove the pork and set aside.
- Add the bok choy stalks to the hot wok and stir-fry for 1 minute until crisp-tender.
- Return the noodles to the wok and pour the prepared seasoning sauce around the edges of the pan to allow it to sizzle and caramelize.
- Toss the noodles vigorously with the sauce using tongs to ensure an even, glossy coating.
- Add the cooked pork back into the wok, toss for an additional 1-2 minutes until everything is heated through and well-combined, then serve immediately.
Notes
If the noodles appear to stick, add a tablespoon of water or chicken broth to help loosen the sauce. For maximum success, ensure all ingredients are chopped and the sauce is pre-mixed before you start the burner, as the stir-fry process happens very quickly over high heat. Leftovers can be stored in an airtight container for up to 2 days, though the texture is best served fresh.
