BBQ Chicken Stuffed Sweet Potatoes

Ingredients
  

  • 4 medium-sized sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 2 cups shredded cooked chicken
  • 1 cup favorite BBQ sauce
  • 1/2 cup red onion, finely diced
  • 1 cup shredded cheddar or Monterrey Jack cheese
  • 1/4 cup fresh cilantro or green onions, chopped
  • Optional: 1/4 cup sour cream or Greek yogurt for topping

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Scrub the sweet potatoes clean and pat them dry; rub the skins with olive oil, sprinkle with salt and pepper, and poke several holes in each potato using a fork.
  3. Roast the potatoes on the prepared baking sheet for 45-60 minutes, or until they are fork-tender and the insides are soft.
  4. While the potatoes roast, combine the shredded chicken and BBQ sauce in a bowl, then heat the mixture in a skillet over medium heat for 5 minutes until the flavors are well combined.
  5. Once the potatoes are done, slice them open down the center and gently fluff the insides with a fork.
  6. Generously divide and pile the BBQ chicken mixture into each potato, then sprinkle the top of each with the shredded cheese.
  7. Place the stuffed potatoes back into the oven for 5 minutes, or until the cheese is melted and bubbling.
  8. Garnish with chopped cilantro or green onions and optional dollops of sour cream before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For best texture, reheat in an oven or air fryer to restore the crispness of the potato skin. To customize, try adding crispy bacon bits, jalapeño slices, or a drizzle of ranch dressing. If potatoes brown too quickly, tent them loosely with aluminum foil.
