Ingredients

  • 8 oz dried flat rice noodles
  • 1 lb chicken breast, thinly sliced into bite-sized strips
  • 2 large eggs, lightly whisked
  • 1 cup fresh bean sprouts
  • 1/2 cup firm tofu, cubed
  • 1/3 cup roasted peanuts, crushed
  • 3 green onions, chopped into one-inch pieces
  • 3 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 3 tbsp palm sugar or brown sugar
  • 1 tbsp chili flakes
  • 2 tbsp vegetable oil for stir-frying
  • Lime wedges for garnish optional
  • Fresh cilantro for garnish optional

Equipment

  • Large wok or deep skillet
  • Small mixing bowl for the sauce
  • Tongs or wooden stir-fry spatula
  • Chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Whisk

Method

  1. Soak the dried rice noodles in a bowl of warm water for 20-30 minutes until they are pliable and al dente. Drain well.
  2. In a small bowl, whisk together the tamarind paste, fish sauce, palm sugar, and chili flakes until the sugar has fully dissolved.
  3. Heat the vegetable oil in a large wok or skillet over high heat.
  4. Add the sliced chicken breast to the hot wok and stir-fry until opaque and lightly browned.
  5. Push the chicken to one side of the wok and pour the whisked eggs into the empty space. Scramble them quickly until set, then mix them into the chicken.
  6. Add the drained noodles and the prepared sauce mixture to the wok immediately.
  7. Toss everything together vigorously for 1-2 minutes, ensuring the noodles are evenly coated and have absorbed the sauce until glossy.
  8. Fold in the bean sprouts, crushed peanuts, and green onions at the very last second to maintain their crisp texture.
  9. Remove from heat immediately and serve hot with optional lime wedges.

Notes

If your noodles appear to be clumping during the stir-fry process, add a splash of water to loosen them. Do not overcrowd your pan; if cooking for more than 3 people, work in batches to ensure the chicken sears rather than steams. For a more authentic experience, serve with fresh lime wedges to brighten the acidity and extra crushed peanuts on top.
