Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, sliced into 1/4-inch rounds
  • 2 stalks celery, sliced thin
  • 3 cloves garlic, grated
  • 6 cups high-quality organic chicken bone broth
  • 1 teaspoon dried thyme
  • 2 cups rotisserie chicken, shredded
  • 4 ounces wide egg noodles
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • Kosher salt to taste
  • Freshly cracked black pepper to taste

Method

  1. Heat the olive oil and butter in your Dutch oven over medium heat until the butter is melted and foaming.
  2. Add the diced onions, carrots, and celery. Sauté for 6-8 minutes, stirring frequently, until the onions are translucent and the carrots begin to soften slightly.
  3. Stir in the grated garlic and dried thyme, cooking for approximately 60 seconds until fragrant, being careful not to brown the garlic.
  4. Pour in the chicken bone broth and increase heat to bring the liquid to a rapid boil.
  5. Add the wide egg noodles to the pot and cook according to package directions, typically 6-8 minutes, until al dente.
  6. Stir in the shredded rotisserie chicken during the final 2 minutes of cooking to ensure it is thoroughly warmed through.
  7. Remove the pot from heat, stir in the fresh lemon juice, and season to taste with kosher salt and black pepper.
  8. Ladle into bowls and garnish generously with fresh chopped parsley before serving.

Notes

For best results, keep the cooked chicken separate until the very end to ensure it stays succulent. If you plan on having leftovers, store the noodles separately from the broth to prevent them from absorbing all the liquid and becoming mushy. You can also add a splash of cider vinegar as an alternative to lemon juice for a different acidic finish. Always use high-quality bone broth for the best nutritional profile and depth of flavor.
