- In a large mixing bowl, combine the ground chicken, shredded cabbage, garlic, ginger, green onions, soy sauce, sesame oil, and white pepper. Mix until the filling is sticky and well combined.
- Place a teaspoon of filling in the center of a dumpling wrapper. Moisten the edges with a bit of water, fold into a half-moon shape, and pleat the edges to seal tightly.
- Heat vegetable oil in a non-stick skillet over medium-high heat until shimmering. Place potstickers in the pan, bottom-side down, and fry for 2 minutes until golden brown.
- Add water to the pan and immediately cover with a lid. Reduce the heat to medium-low and steam the potstickers for 6-8 minutes.
- Remove the lid, turn the heat back to medium-high, and allow the remaining water to evaporate to recrisp the potsticker bottoms.
Notes
Ensure the filling is sticky to prevent potstickers from falling apart. Remove excess moisture from the cabbage to avoid soggy potstickers. Serve immediately to maintain crispiness and offer a variety of dipping sauces for enhanced flavor. You can check the internal temperature of the potstickers to ensure they are cooked through to 165°F (74°C).
