Ingredients
  

  • 1 lb flank steak, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp baking soda
  • 2 cups fresh broccoli florets
  • 1/2 cup beef broth
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp fresh garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp vegetable oil
  • 2 tbsp water for steaming broccoli

Method
 

  1. In a medium bowl, combine the thinly sliced beef with the cornstarch, soy sauce, and baking soda. Massage the mixture thoroughly into the meat.
  2. Let the beef rest for at least 10 minutes to allow the velveting process to tenderize the fibers.
  3. While the beef rests, whisk together the beef broth, 1/4 cup soy sauce, oyster sauce, brown sugar, minced garlic, and grated ginger in a small bowl.
  4. Heat a wok or large skillet over medium-high heat and add the vegetable oil.
  5. Sear the beef in small batches to ensure a good crust, cooking until browned but not fully cooked through; remove and set aside on a plate.
  6. In the same pan, add the broccoli florets and a splash of water. Cover briefly to steam for 2-3 minutes until bright green and crisp-tender.
  7. Return the browned beef to the pan and pour in the prepared sauce mixture.
  8. Toss everything together over medium-high heat for about 2 minutes, allowing the sauce to bubble and thicken into a glossy glaze that coats the beef and broccoli.
  9. Serve immediately, ideally over a bed of steamed jasmine rice.

For the best texture, always slice your steak against the grain to ensure every bite is buttery soft. If you prefer a thicker sauce, stir in a slurry of 1/2 teaspoon cornstarch mixed with 1 teaspoon water near the end of cooking.
