  • 6-8 small flour tortillas
  • 6 strips thick-cut bacon, cooked and crumbled
  • 1.5 cups shredded Monterey Jack or sharp cheddar cheese
  • 1/2 cup high-quality ranch dressing
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons melted butter
  • Fresh chives or cilantro for garnish
  • Extra ranch dressing for serving

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish with cooking spray or a thin layer of oil.
  2. In a medium mixing bowl, combine the shredded rotisserie chicken, half of the crumbled bacon, ranch dressing, garlic powder, and smoked paprika. Stir until the chicken is evenly coated and creamy.
  3. Lay the tortillas flat. Distribute a small amount of cheese in the center of each, followed by a generous spoonful of the chicken-ranch mixture.
  4. Roll each tortilla tightly like a taquito and place them seam-side down in the prepared baking dish, ensuring they are not overcrowded to maintain crispiness.
  5. Brush the tops of the rolled tortillas with the melted butter, then sprinkle the remaining cheese and the rest of the crumbled bacon over the top.
  6. Bake for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted and bubbling.
  7. Remove from the oven, garnish with fresh chives or cilantro, and serve warm with a side of extra ranch dressing for dipping.

Notes

To ensure maximum crunch, avoid overcrowding the baking dish so the hot air can circulate around each taco. For an extra kick, mix in diced jalapeños or swap Monterey Jack for Pepper Jack cheese. If you have leftovers, reheat them in an air fryer at 350°F for 3 minutes to restore their crisp texture.
