  • 2 cups Cooked quinoa or jasmine rice
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels canned, frozen, or fresh
  • 1 Avocado, thinly sliced
  • 1/4 cup Fresh cilantro, chopped
  • 2 Lime wedges for garnish
  • Salt and black pepper to taste

Method

  9. Squeeze a fresh lime wedge over each bowl immediately before serving.
