Chocolate Strawberry Frozen Yogurt Bites

  • 2 cups fresh strawberries, washed and hulled
  • 1.5 cups plain or vanilla Greek yogurt
  • 1 cup semi-sweet or dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon honey or maple syrup optional, for added sweetness

Method
 

  1. Prepare a baking sheet by lining it with a piece of parchment paper to prevent sticking.
  2. Wash and hull the strawberries, then slice them into bite-sized pieces or halves.
  3. In a small bowl, stir the Greek yogurt until smooth. If using the optional sweetener, fold in the honey or maple syrup now.
  4. Dip each strawberry piece into the yogurt using a fork, ensuring it is well coated, and place it on the prepared baking sheet.
  5. Transfer the baking sheet to the freezer and allow the yogurt-covered strawberries to set for at least 60 minutes.
  6. Once the yogurt is firm, combine the chocolate chips and coconut oil in a microwave-safe bowl.
  7. Microwave the chocolate mixture in 30-second intervals, stirring in between, until the chocolate is completely melted and glossy.
  8. Remove the baking sheet from the freezer and immediately drizzle the melted chocolate over the frozen yogurt bites.
  9. The chocolate will harden almost instantly upon contact with the cold yogurt. Serve immediately or return to the freezer for storage.

Notes

Store these bites in an airtight container in the deepest part of your freezer for up to two weeks. For variations, try swapping strawberries for blueberries or raspberries, or sprinkle the tops with sea salt, crushed nuts, or shredded coconut before the chocolate hardens for extra crunch and flavor.
