Creamy Chicken Taco Soup 1-Pot

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups high-quality chicken broth
  • 15 oz can black beans, rinsed and drained
  • 1 cup frozen or canned corn kernels
  • 14.5 oz can diced tomatoes with green chilies
  • 2 tablespoons taco seasoning
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream or half-and-half
  • 1 tablespoon olive oil optional, for base
  • Optional toppings: fresh cilantro, lime wedges, shredded cheddar cheese, crispy tortilla strips

Method
 

  1. In a large pot or Dutch oven, combine the chicken broth, rinsed black beans, corn, and diced tomatoes with green chilies over medium heat.
  2. Add the taco seasoning to the pot and stir thoroughly to ensure the spices are fully incorporated into the liquid base.
  3. Place the raw chicken breasts directly into the broth. Bring to a gentle simmer and poach for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  4. Carefully remove the chicken breasts from the pot. Using two forks, shred the chicken into bite-sized pieces.
  5. Return the shredded chicken to the pot.
  6. Lower the heat to low. Add the softened cream cheese and heavy cream, whisking gently until the soup is completely smooth and luxurious.
  7. Allow the soup to simmer gently for an additional 5 minutes to let the flavors marry. Do not let the soup boil vigorously once the dairy is added to prevent separation.
  8. Ladle into bowls and serve warm with your preferred toppings.

Notes

If the consistency is too thick, splash in more chicken broth until the desired level is reached. For a lighter profile, you can substitute the heavy cream with Greek yogurt, stirring it in at the very end to prevent curdling. To store, keep in an airtight container in the refrigerator for up to four days; if freezing, omit the dairy and whisk it in only after reheating the base.
