- Pat the chicken thighs dry with paper towels and season both sides generously with salt, pepper, and smoked paprika.
- Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat.
- Sear the chicken thighs for about 5 minutes per side until a golden-brown crust forms. Remove chicken from the pan and set aside on a plate.
- In the same pan, add the diced onion and sauté until translucent. Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the dry rice to the pan and toast, stirring constantly, for about 1 minute.
- Pour in the chicken broth, using a wooden spoon to scrape the bottom of the pan to release all the flavorful brown bits.
- Nestle the chicken thighs back into the pan, liquid, and juices. Cover with a tight-fitting lid and reduce the heat to low.
- Simmer for 20 minutes, or until the rice is tender and the liquid is mostly absorbed.
- Stir in the heavy cream and grated Parmesan cheese, allowing it to bubble gently for another 5 minutes until the sauce is thick and creamy.
- Remove from heat and let rest for 5 minutes before garnishing with fresh parsley and serving.
Notes
Ensure the chicken reaches an internal temperature of 165°F (74°C) for food safety. If the sauce becomes too thick, stir in an extra splash of chicken broth. This dish is excellent for meal prep, as the flavors meld and improve in the refrigerator for up to 3 days.
