- Toss the salmon cubes in the cornstarch mixture until each piece is evenly and lightly coated.
- Heat the avocado oil in a large non-stick skillet over medium-high heat until the oil is shimmering.
- Place the salmon cubes in the skillet, ensuring they are spaced out and not touching to prevent steaming.
- Pan-sear the salmon for 2-3 minutes per side until a golden-brown crust forms on all sides.
- In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth.
- Remove salmon from the heat and either drizzle the sauce over the bites immediately before serving or serve the sauce on the side to maintain the crunch.
Notes
To keep the salmon bites crispy, never toss them in the sauce until the very moment of consumption, as moisture will soften the cornstarch crust. If the sauce is too thick, thin it with a half-teaspoon of water at a time. For a lighter meal, serve these bites in butter lettuce wraps or over a bed of steamed jasmine rice.
