Method
- Preheat your oven to 400°F (200°C).
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with paprika, salt, and pepper.
- Coat each chicken breast in flour, dip in eggs, and then coat in breadcrumbs.
- Place chicken on a baking sheet and bake for 20 minutes or until golden and cooked through.
- In a small bowl, combine mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, and minced garlic.
- Whisk until smooth and creamy. Adjust seasoning with salt and pepper to taste.
- Slice the sandwich rolls in half and lightly toast them.
- Spread a generous amount of Caesar dressing on both halves of the rolls.
- Layer with crispy chicken, romaine lettuce, and cherry tomatoes.
- Top with the other half of the roll and press gently to hold everything together.
Notes
To ensure the chicken is perfectly crispy, do not overcrowd the baking sheet, allowing air to circulate evenly. Adjust the seasoning in the dressing to match your personal taste. For an extra kick, add a dash of chili flakes to the breadcrumbs.
