- In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, and grated ginger until fully combined and smooth.
- Bring a large pot of salted water to a boil. Cook your noodles according to the package directions, but remove them from the heat one minute early so they remain slightly firm.
- Drain the noodles thoroughly and toss them immediately with the toasted sesame oil to prevent sticking.
- Heat a large skillet or wok over medium-high heat and add the neutral oil.
- Add the cabbage or broccoli florets and minced garlic to the pan. Stir-fry for about 3 minutes until the vegetables are bright and crisp-tender.
- Add the cooked noodles to the pan with the vegetables.
- Pour the prepared sauce over the noodles and vegetables.
- Use tongs to toss everything together over the heat for 2 minutes, ensuring the sauce is evenly distributed and coats every strand of noodle. If the pan seems dry, add a tablespoon of water or broth to create a glossy finish.
- Garnish with sliced green onions and serve immediately.
Notes
To customize, add a protein like seared tofu, rotisserie chicken, or shrimp. If the sauce is too thick, a splash of water or broth helps emulsify it. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a pan with a splash of water to refresh the noodles.
