- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat.
- Add the diced chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
- Stir in the minced garlic, chopped chipotle peppers, honey, and smoked paprika. Toss until the chicken is thoroughly coated.
- Simmer the mixture for 2-3 minutes until the sauce reduces into a thick, sticky, glossy glaze.
- Slice the package of Hawaiian sweet rolls in half horizontally to create top and bottom slabs.
- Place the bottom halves of the rolls into a 9x13 baking dish.
- Spread the honey chipotle chicken mixture evenly over the rolls.
- Layer the cheese slices over the chicken, then place the top halves of the rolls on top.
- In a small bowl, mix the melted butter with garlic powder and brush the mixture generously over the tops of the rolls.
- Bake for 8-10 minutes, or until the cheese is melted and the tops are golden brown.
- Remove from the oven, garnish with fresh cilantro if desired, and serve warm.
Notes
To avoid soggy bread, assemble the sliders immediately before baking. If you prefer a milder heat, increase the honey to 4 tablespoons. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in the oven or air fryer to regain the crisp texture. Feel free to add avocado or a quick vinegar-based slaw for extra texture.
