- Preheat your oven to 375°F (190°C) and grease a 9x9 inch baking dish with non-stick spray or olive oil.
- Heat olive oil in a large skillet over medium-high heat. Add the diced onion and ground turkey, cooking until the turkey is browned and no longer pink.
- Stir in the minced garlic and Italian seasoning, cooking for about 1 minute until fragrant.
- Add the sliced zucchini to the skillet and sauté for 5 minutes to soften and release excess moisture. Drain any remaining liquid from the skillet carefully.
- In a medium bowl, combine the Greek yogurt (or sour cream) with half of the mozzarella and half of the Parmesan cheese.
- Fold the cheesy mixture into the turkey and zucchini base until thoroughly combined.
- Transfer the mixture into the prepared baking dish, spreading it into an even layer.
- Top with the remaining mozzarella and Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted, bubbling, and golden brown on top.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
To customize, add red pepper flakes for heat or swap mozzarella for pepper jack. For added crunch, sprinkle crushed pork rinds or toasted pine nuts on top before serving. This casserole stores well in an airtight container in the refrigerator for up to 4 days, making it an excellent candidate for meal prep.
