  • 2 packs dried ramen noodles discard seasoning packets
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon fresh ginger, finely grated
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Method
 

  1. Bring a large pot of water to a boil.
  2. Cook the ramen noodles according to the package instructions, aiming for al dente texture to prevent them from becoming mushy.
  3. While the noodles cook, whisk together the soy sauce, maple syrup, rice vinegar, chili garlic sauce, and grated ginger in a small bowl until smooth.
  4. Drain the noodles thoroughly, but reserve about 1 tablespoon of the pasta water to help the sauce emulsify.
  5. Return the hot noodles to the pot or transfer to a large mixing bowl.
  6. Pour the prepared sauce and the reserved splash of pasta water over the hot noodles.
  7. Use tongs to toss the noodles vigorously until they are evenly coated and glossy.
  8. Serve immediately, topped with freshly sliced green onions and toasted sesame seeds.

Notes

To customize, add protein like pan-fried tofu cubes or sautéed vegetables such as bok choy and snap peas. For an extra pop of brightness, finish with a squeeze of fresh lime juice. If the noodles appear too dry after tossing, add an additional teaspoon of hot water or a light drizzle of sesame oil.
