Easy Steak Queso Rice

Ingredients
  

  • 1 lb Sirloin steak, sliced into thin bite-sized strips
  • 1.5 cups Long-grain white rice, rinsed
  • 3 cups Beef broth, low-sodium
  • 1 medium Yellow onion, finely diced
  • 1 cup Shredded sharp cheddar cheese
  • 4 oz Cream cheese, softened
  • 1 tbsp Taco seasoning
  • 2 tbsp Vegetable oil or avocado oil
  • Salt and black pepper to taste
  • Optional: Fresh cilantro or lime wedges for garnish

Method
 

  1. Heat a large, deep skillet or Dutch oven over medium-high heat with two tablespoons of oil.
  2. Add the steak strips in a single layer, searing for 2-3 minutes until browned on all sides. Remove the steak from the pan and set aside.
  3. In the same pan, add the diced onions and sauté until translucent, using a spatula to scrape up the flavorful browned bits (fond) from the bottom of the pan.
  4. Stir in the rinsed rice and cook for about one minute, ensuring the grains are coated in the pan drippings.
  5. Pour in the beef broth, taco seasoning, and green chiles. Stir to combine and bring the mixture to a gentle boil.
  6. Reduce the heat to low, cover the pan tightly with a lid, and simmer for 15-18 minutes until the liquid is fully absorbed and the rice is tender.
  7. Turn off the heat. Fold in the cream cheese and shredded cheddar until the mixture is completely melted and creamy.
  8. Return the seared steak strips to the pan, toss gently to combine with the rice and cheese, and serve immediately.

Notes

To ensure perfectly fluffy rice, resist the urge to stir the pan while it simmers, as this releases starch and can make the dish gummy. If the rice appears too dry after cooking, stir in a splash of additional beef broth or water to reach your desired consistency. For an extra pop of flavor, serve with a squeeze of fresh lime juice or a garnish of chopped cilantro. To customize, add black beans, corn, or diced bell peppers during the sauté step.
