  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 1 lb baby gold potatoes, quartered
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1 sprig fresh rosemary or thyme

Method
 

  1. Wash and quarter the baby potatoes into bite-sized pieces.
  2. Pat the steak cubes completely dry using paper towels to ensure a perfect sear.
  3. Season the steak cubes generously with salt and pepper.
  4. Heat the olive oil in a large cast-iron skillet over medium-high heat.
  5. Add the potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender. Remove potatoes from the pan and set aside.
  6. If the pan is dry, add a small splash of oil. Working in batches to avoid crowding, sear the steak bites for 2-3 minutes per side until browned to your preferred doneness.
  7. Reduce the heat to low. Add the butter, minced garlic, and Worcestershire sauce to the pan, swirling until the butter is melted and fragrant.
  8. Return the cooked potatoes to the pan and toss everything together to coat in the garlic butter sauce.
  9. Garnish with fresh chopped parsley and optional herbs like rosemary or thyme before serving immediately.

Notes

For the best flavor, use fresh garlic cloves rather than jarred, as it provides a more vibrant punch. If you have leftovers, store them in an airtight container for up to two days and reheat in a skillet over medium heat to restore the crispiness of the potatoes. To add an extra layer of depth, baste the steak with the butter and aromatics using a spoon during the final minute of cooking.
