  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

  • 1 tbsp vegetable oil
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Optional: 1/4 tsp red pepper flakes
  • Optional: 1/2 cup pasta water if needed for consistency

Method
 

  1. Pat the steak cubes completely dry with paper towels and season generously with salt and pepper.
  2. Heat a large skillet over medium-high heat with a splash of vegetable oil and 1 tablespoon of butter.
  3. Sear the steak in batches to avoid crowding the pan, cooking until a golden-brown crust forms on all sides (about 2-3 minutes). Remove steak and set aside on a plate.
  4. In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic; sauté over medium heat until fragrant, about 30 seconds.
  5. Pour in the heavy cream and garlic powder, bringing to a gentle simmer.
  6. Add the cheese tortellini to the cream mixture. Simmer for 5-7 minutes, or until the pasta is tender and the sauce has begun to thicken.
  7. Stir in the freshly grated Parmesan cheese until melted and the sauce is velvety smooth.
  8. Return the seared steak bites and any accumulated juices back into the skillet.
  9. Toss everything gently to coat and heat through for 1 minute.
