  • 1.5 lbs chicken breast or thighs, cut into 1-inch bite-sized chunks
  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 1 large red onion, sliced into wedges
  • 2 bell peppers mixed colors
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • Optional: 1 fresh lemon for squeezing
  • Optional: 2 tablespoons fresh parsley or cilantro, chopped for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the bite-sized chicken, cubed sweet potatoes, red onion wedges, and chopped bell peppers.
  3. Drizzle the olive oil over the mixture and sprinkle with the smoked paprika, garlic powder, dried oregano, sea salt, and black pepper.
  4. Toss the ingredients thoroughly using your hands or a sturdy spatula until every piece is evenly coated in oil and spices.
  5. Spread the mixture in a single, even layer onto the prepared baking sheet. Ensure the ingredients are not overcrowded to promote roasting rather than steaming.
  6. Roast in the center of the oven for 25 to 30 minutes, shaking the pan halfway through to ensure even browning of the potatoes and chicken.
  7. Remove from the oven, squeeze fresh lemon juice over the top if desired, and garnish with chopped fresh herbs before serving.

Notes

To ensure uniform cooking, keep your sweet potato cubes and chicken chunks roughly the same size. For added heat, include a pinch of red pepper flakes in the spice mix. Leftovers can be stored in airtight containers in the refrigerator for up to four days; simply reheat in the microwave for two minutes for a quick, healthy lunch or dinner.
