  • 1 lb chicken breast or thighs, thinly sliced
  • 8 oz Lo Mein or Ramen noodles
  • 1/2 cup roasted peanuts
  • 2 tablespoons vegetable oil peanut or canola
  • 3 tablespoons soy sauce
  • 2 tablespoons Chinkiang black
  • 1 tablespoon hoisin sauce
  • 1 tablespoon chili garlic sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 5-8 dried red chilies
  • 1 teaspoon Sichuan peppercorns optional
  • 2 stalks green onions, chopped into 1-inch segments

Method
 

  1. Bring a large pot of water to a boil and cook noodles according to package directions; drain, rinse with cold water, and set aside.
  2. In a small bowl, whisk together the soy sauce, Chinkiang vinegar, hoisin sauce, and chili garlic sauce to create the master stir-fry base.
  3. Heat a wok or large skillet over medium-high heat. Add the vegetable oil until it shimmers.
  4. Add the dried red chilies and Sichuan peppercorns to the hot oil, toasting for 30 seconds until fragrant.
  5. Add the chicken slices to the pan in a single layer and sear until golden brown and cooked through, about 3-4 minutes.
  6. Stir in the minced garlic and ginger, cooking for 30-60 seconds until aromatic.
  7. Pour the prepared sauce mixture into the pan, allowing it to bubble and reduce for 1 minute.
  8. Add the cooked noodles and roasted peanuts to the wok, tossing vigorously with tongs until the noodles are glossy and evenly coated in the sauce.
  9. Remove from heat, garnish with fresh green onions, and serve immediately.

Notes

If the sauce becomes too thick or the noodles look dry, add 1-2 tablespoons of chicken broth or reserved pasta water to loosen the coating. To add more nutrition, toss in sliced bell peppers or snap peas during the stir-fry process. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat with a splash of water to restore the sauce consistency.
