Overnight Refrigerator Dill Pickles: Quick & Easy 5-Minute Crunchy Homemade

Ingredients
  

  • 1 lb pickling cucumbers Kirby or similar small variety
  • 2 cups filtered water
  • 1 cup white vinegar
  • 1 tablespoon kosher salt
  • 3 cloves fresh garlic, smashed
  • 2 large sprigs fresh dill fronds and stems
  • 1 teaspoon mustard seeds
  • 1 teaspoon whole black peppercorns
  • 1/2 teaspoon red pepper flakes optional
  • 1 fresh grape leaf optional, for extra crunch

  • Small saucepan for heating the brine

Method
 

  1. Thoroughly scrub the pickling cucumbers under cold water to remove any dirt or residue.
  2. Trim off the blossom end of each cucumber (the small dark tip), as the enzymes located there can cause the pickles to soften.
  3. Slice the cucumbers into spears or rounds based on your preference.
  4. In a small saucepan, combine the water, vinegar, kosher salt, mustard seeds, peppercorns, and red pepper flakes. Heat over medium until the salt is completely dissolved, then remove from heat and let cool slightly.
  5. Place the smashed garlic, fresh dill, and optional grape leaf into the bottom of a clean, sterilized 1-quart glass jar.
  6. Pack the cucumber spears tightly into the jar, ensuring they fit snugly but are not crushed, leaving about an inch of space at the top.
  7. Pour the warm brine over the cucumbers until they are fully submerged.
  8. Seal the jar tightly and place it in the refrigerator. Let the pickles sit for at least 24 hours before serving to allow the flavors to develop.

Notes

These pickles are not shelf-stable and must be stored in the refrigerator at all times. They will stay fresh and crunchy for up to 3 weeks. If you prefer them spicier, add 2-3 dried chili de arbol peppers. The brine can be reused for one additional batch, though the flavor intensity will decrease slightly.
