Method
- Put on food-safe gloves to protect your skin from capsaicin before handling the peppers.
- Wash the jalapenos thoroughly under cold running water, then slice them into uniform 1/4-inch rounds. You may leave the seeds in for higher heat or remove them for a milder pickle.
- In a small saucepan, combine the white vinegar, water, granulated sugar, kosher salt, and pickling spices (mustard seeds/peppercorns). Bring to a simmer over medium-high heat, stirring until the sugar and salt have fully dissolved.
- Pack the sliced jalapenos and smashed garlic cloves into a clean, heat-safe glass jar.
- Carefully pour the hot brine over the peppers until they are completely submerged. Add a sprig of oregano or carrot slices now if desired.
- Let the jar sit uncovered at room temperature until the brine cools to room temperature.
- Seal the jar with its lid and transfer it to the refrigerator. While they can be eaten after one hour, they reach peak flavor after 24 hours.
Notes
To maintain maximum crunch, store the jar in the coldest part of your refrigerator, avoiding the door where temperatures fluctuate. Always use a clean fork when removing peppers from the jar to prevent bacterial contamination. These pickles will stay fresh and crunchy for up to two months when stored properly. If you prefer even more complexity, try adding a strip of lemon peel or a slice of fresh ginger to the jar during the packing process.
