Spicy Crab Sushi Roll: Easy 5-Minute Perfect Bites

Ingredients
  

  • 2 cups cooked short-grain sushi rice
  • 2 tablespoons rice vinegar
  • 4 sheets nori seaweed
  • 8 oz imitation crab meat, finely shredded
  • 3 tablespoons Japanese mayonnaise Kewpie
  • 1-2 tablespoons Sriracha hot sauce
  • 1 large cucumber, seeded and cut into thin matchsticks
  • 1 tablespoon toasted sesame seeds
  • Optional: 1 ripe avocado, thinly sliced

  • Sharp chef's knife
  • Small mixing bowl
  • Rice cooker or medium saucepan
  • Damp kitchen towel or paper towels
  • Small bowl with water and a splash of vinegar (for fingers)
  • Cutting board

Method
 

  1. Cook the sushi rice according to package directions. Once cooked, gently fold in the rice vinegar and allow it to cool to room temperature.
  2. In a small mixing bowl, combine the shredded imitation crab meat, Japanese mayonnaise, and Sriracha until the mixture is creamy and uniform.
  3. Prepare your workspace by placing the bamboo mat down. Have your bowl of vinegared water nearby to prevent the rice from sticking to your hands.
  4. Place a sheet of nori, rough side facing up, on the bamboo mat.
  5. Using damp fingers, spread a thin, even layer of rice over the nori, leaving about a one-inch strip of empty nori at the top edge.
  6. Arrange a generous line of the spicy crab mixture horizontally across the center of the rice. Add a line of cucumber matchsticks (and avocado, if using) next to the crab.
  7. Using the bamboo mat as a guide, lift the bottom edge of the nori and roll it over the filling, applying firm, even pressure to create a tight cylinder.
  8. Lightly dab the empty top strip of nori with water and finish rolling to seal the seam.
  9. Using a very sharp knife wiped with a damp cloth, slice the roll into 8 even pieces.
  10. Arrange on a platter and garnish with a sprinkle of toasted sesame seeds before serving.

Notes

To ensure your rolls look professional, always wipe your knife blade with a damp cloth between each slice to remove excess starch. If you are new to rolling, don't overfill the seaweed, as it makes sealing difficult. Store any leftovers in an airtight container in the refrigerator for up to 24 hours, though these are best enjoyed fresh to maintain the texture of the nori.
