Ingredients

  • 3 cups cooked short-grain sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons Furikake Japanese rice seasoning
  • 1 lb imitation crab meat, finely shredded
  • 1/2 cup Kewpie Japanese
  • 4 oz cream cheese, softened
  • 1 tablespoon Sriracha sauce
  • 1 package roasted nori sheets, for serving

Equipment

  • 9x13 inch baking dish
  • Medium mixing bowl
  • Small mixing bowl
  • Rice cooker or medium pot
  • Rubber spatula
  • Fork or whisk for mixing
  • Measuring cups and spoons

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the cooked sushi rice with the rice vinegar, sugar, salt, and half of the Furikake. Mix gently until well incorporated.
  3. In a separate bowl, combine the shredded crab meat, Kewpie mayonnaise, softened cream cheese, and Sriracha. Stir until the mixture is uniform and smooth.
  4. Lightly grease a 9x13 inch baking dish with non-stick spray or a thin layer of oil.
  5. Spread the seasoned sushi rice into the bottom of the prepared baking dish, pressing down gently to create an even, compact layer.
  6. Evenly spread the creamy crab mixture over the top of the rice layer.
  7. Sprinkle the remaining Furikake over the top of the seafood mixture.
  8. Bake for 10-12 minutes, then switch the oven to broil for 2-3 minutes until the top is bubbling and slightly golden.
  9. Remove from the oven, let cool for a few minutes, and serve warm by scooping portions onto individual pieces of crispy nori sheets.

Notes

For the best texture, ensure your rice is cooked with slightly less water than usual so it remains sticky but not mushy. Feel free to customize by adding diced avocado, masago (fish roe), or a drizzle of unagi sauce or extra Sriracha before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days, though it is best enjoyed immediately for optimal nori crispness.
