- Prepare the beef: In a medium bowl, combine the thinly sliced flank steak with the soy sauce, Shaoxing rice wine, and cornstarch. Mix well and let marinate for at least 10 minutes.
- Cook the noodles: Bring a large pot of water to a boil. Cook noodles according to package instructions, drain well, and toss with a small amount of oil to prevent sticking.
- Sear the beef: Heat a wok or large skillet over high heat until smoking. Add 1 tablespoon of vegetable oil. Add the beef in a single layer and sear until browned on all sides. Remove from the pan and set aside.
- Stir-fry aromatics and greens: Add the remaining oil to the hot wok. Add minced garlic, grated ginger, and your choice of vegetables. Sauté for about 2 minutes until the greens are vibrant but still crunchy.
- Combine: Add the cooked noodles and the seared beef back into the wok. Pour the oyster sauce over the mixture.
- Toss: Stir constantly for 60 seconds, ensuring the sauce is evenly distributed and coats every strand of noodle.
- Finish and serve: Remove from heat, drizzle with sesame oil, and serve immediately.
Notes
For the best texture, always rinse noodles with warm water after boiling to remove excess starch. If you prefer extra heat, garnish with chili oil or red pepper flakes. Store leftovers in an airtight container for up to 3 days; add a splash of water when reheating to keep noodles from drying out.
