Method
 

  1. Preheat your oven to 375°F (190°C).

  4. Deglaze the skillet with the chicken bone broth and salsa verde, using a wooden spoon or spatula to scrape up the flavorful browned bits (fond) from the bottom of the pan.
  5. Stir in the black beans, frozen corn, and the seared chicken with any collected juices. Bring the mixture to a gentle simmer.
  6. Stir in 1 cup of the shredded cheese until incorporated.
  7. Cover the skillet tightly with heavy-duty aluminum foil to ensure a pressurized steam environment. Bake for 25 minutes.
  8. Carefully remove the foil, sprinkle the remaining 1 cup of cheese over the top, and return to the oven uncovered for 5-7 minutes, or until the cheese is bubbling and slightly browned.
  9. Remove from the oven and let the casserole rest for 10 minutes to allow the moisture to redistribute and the rice to reach its final, perfect texture.
