Ingredients
  

  • 1 lb chicken breast or thighs, thinly sliced
  • 1 tbsp vegetable oil or high-smoke point oil
  • 2 cups broccoli florets
  • 2 cups bok choy, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp oyster sauce or vegetarian stir-fry sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tsp cornstarch mixed with 2 tbsp water slurry
  • 2 green onions, sliced for garnish
  • Optional: 1/2 tsp chili flakes for heat

Method
 

  1. Prepare all ingredients ('mise en place') by chopping vegetables, slicing protein, and mincing aromatics before starting.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, oyster sauce, sugar, and sesame oil. Set aside.
  3. Heat your wok or large skillet over medium-high heat until it begins to smoke slightly.
  4. Add the protein to the pan and sear until browned and cooked through (165°F internal temp). Remove from pan and set aside.
  5. Add a splash of oil if needed, then toss in the broccoli and sauté for 2-3 minutes until bright green and crisp-tender.
  6. Add the bok choy, ginger, and garlic, stirring constantly for 1 minute until fragrant.
  7. Return the cooked protein to the pan and pour the prepared sauce mixture over the ingredients.
  8. Stir in the cornstarch slurry and toss everything together for 1 minute until the sauce thickens and glazes the ingredients perfectly.
  9. Remove from heat, garnish with sliced green onions, and serve immediately over steamed rice or noodles.

Notes

Control the heat by not overcrowding the pan to maintain a proper sear (Wok Hei). If the sauce is too thin, add more cornstarch slurry. Feel free to swap vegetables based on what is in your crisper drawer, such as snap peas, carrots, or bell peppers. For a spicy kick, add sambal or extra chili flakes during the final toss.
