Ingredients
  

  • 12 oz fresh lo mein egg noodles or dried spaghetti
  • 1 tbsp sesame oil
  • 2 tbsp vegetable or canola oil
  • 2 cups bok choy, chopped into bite-sized pieces
  • 1 cup carrots, cut into thin matchsticks
  • 1 cup snap peas, trimmed
  • 1 red bell pepper, thinly sliced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce or vegetarian mushroom sauce
  • 3 cloves garlic, freshly minced
  • 1 tbsp fresh ginger, freshly minced
  • Optional: 1 tsp chili garlic sauce or sriracha for heat
  • Optional: 2 green onions, sliced for garnish

Method
 

  1. Bring a large pot of water to a boil and cook the noodles according to package instructions until just shy of al dente.
  2. Drain the noodles thoroughly and toss them with 1 tablespoon of sesame oil in a bowl to prevent sticking.
  3. In a small mixing bowl, whisk together the soy sauce, oyster sauce, minced garlic, and ginger until well combined.
  4. Heat a large wok or skillet over medium-high heat until hot.
  5. Add 2 tablespoons of neutral oil to the pan.
  6. Add the carrots, red bell peppers, and snap peas to the pan. Stir-fry for about 3 minutes until tender-crisp.
  7. Add the bok choy to the skillet and cook for another 1-2 minutes until just wilted but still vibrant green.
  8. Add the prepared noodles and the sauce mixture to the wok.
  9. Toss everything together continuously for about 60 seconds to ensure the noodles are evenly coated and heated through.
  10. Remove from heat immediately and serve while hot, garnished with green onions if desired.

Notes

For the best texture, ensure your vegetables are cut to a uniform size so they cook evenly. Don't overcrowd the pan, as this causes the vegetables to steam rather than sear. If you want to add protein, seared tofu, shrimp, or thinly sliced chicken breast work beautifully. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat briefly in a pan with a splash of water to loosen the noodles.
